Salsiccia and soppressata are the most famous cured salami in Basilicata. In fact during the Roman Empire people said that Lucanian, people of Basilicata, taught slaves to make «salsiccia». The «lucanica» has a millenary history. This cured soppressata is made in Gorgoglione, little village in the hills of Basilicata region. Soppressata is made following the Lucanian tradition with lean meat, salt and ground black pepper. The soppressata is then cured for 30 days in special rooms.
